If you have a '95-'97 model,it is pretty difficult (and dirty!) to change the bulbs. However,once you work your hands in there and are able to grab the back of the bulb,just twist it and it should turn and pull out. Then just undo the connectors. On my '95,it is a total pain to change bulbs because 2 of them don't like to lock and unlock very well.
If you have a '98-00,with my '98 Mystique,I used to remove the entire headlight assembly. 3 screws hold it in place,but it's a stupid torx bit,so make sure you've got one of those,it's not all that common,atleast in my tool collection. 2 screws ontop of the light and one at the bottom behind the light. It's tricky to find the bottom one the first time,but once you find it,it's easier the next time. Pull the headlight assembly out,and then for each bulb,3 more little torx screws hold each bulb in. Undo the screws,and twist out the bulb.
As for brighter bulbs,I use Sylvania Silverstars. I have used them in every vehicle I've had and swear by them for a halogen bulb. If you have a 98-00,just the regular 9006 for the low beam will work fine and 9005 for the high beam. If you have a 95-97,they take the same bulbs,but the lights on 95-97s suck,so I recommend to use the high beam (9005) bulbs in the low beam sockets. All you need to do is file down the little tabs inside the connector on the bulb so that it'll fit. It's easy to do and doesn't take long. Lights are much brighter,but not blinding. Basically run 4 high beam bulbs (2 in the lows,2 in the highs) and you'll be all set. Then if you really want to piss people off at night like I do,get some bright fog lights.
