When I went to change the pads on the Contour, I noticed that the passenger side pads were worn to the metal while the driver side had maybe 20% life left.  Neither caliper seemed to be stuck, but I wonder what else could be wrong? Suspension seemed to be intact and tire pressure was equal.

20% difference isn't all that much. It could be normal.
Make sure that you properly lube everything going back together.
Lube the caliper slide pins and make sure that they don't bind.
Lube every part of the pad backing plate that touches the caliper, especially any edge part that slides.
Use brake caliper grease.

That could be gunk build up on the sliders. so one might have been moving slower or sticking longer because it didn't move as fast. Good thing you changed them if it was down to metal!

I used the grease that Autozone gave me on the back of the new pads. I was shocked that there didn't seem to be any sort of wear indicator. Every once in a while the brakes could squeak lightly, but now even the new pads are squeaking when I brake on hills...

BG makes a product called brake quiet that you pour on the face of the pad that helps, also try cleaning all brake components with brake cleaner, that should help some. Also have your rotors turned as well, they might be heat hardened.
