If the mass air sensor sends information via a certain voltage, would it be possible to place a variable resistor in-line with the output and fool the computer into thinking it's getting more or less air than it really is? Unless I am wrong, it seems this could be used to adjust the air/fuel mixture.

That's what 'MAF OPTIMIZERS' do. The Contour runs rich already, so I'd say leave it be.
