I usually use this stuff from the store called Dale's sauce, which doesn't hide the flavor of the meat itself like some marinades.

I was just wondering what some other people use, and I'm especially interested in rubs rather than marinades to change things around a little.

Thanks,
Paul

This is a great basic starter for a dry rub...

2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons black pepper
1 tablespoons salt
2 tablespoons chili powder
2 tablespoons cumin powder
2 tablespoons brown sugar
3 to 4 tablespoons paprika
2 teaspoons cayenne pepper

Mix it up by increaseing some of the ingredients and/or adding other items to it. I would cook with it, as is, but then after you taste it that first time you will know what you need to change to fit your tastes. Then again, you may not need to change anything.

Neckid baby!
Little salt, little pepper, little flame and dinners on!

Marination is for cheaper cuts of meat. You should never hide the flavor of a good cut of meat by over seasoning.

I think that's personal taste. I saw this on a website and agree with it (not that I can't enjoy good meat without marinade or sauce): Marinating turns ok meat into good meat and good meat into great meat.

If you don't like the way a good steak tastes...don't eat steak!
It never made any sense to me that people would spend $10 a pound for a good cut of meat and then try and make it taste like something else.
Marinade imparts flavor but the original purpose was to breakdown connective tissues that make them tough and make less desirable cuts of meat with less fat marbling(flavor) tender and give them some flavor.

See where I said I also like good meat without marinade. Anyways, it's all how the person wants it. Making a good marinade while not over powering the steak's natural flavor is party of good cooking. Just because you can't appreciate a properly done marinade doesn't mean that it is wrong for others to appreciate it. Good meat + good marinade = great eating. A bad meat with a good marinade is not going to be as good as it would be with good meat.
