start with them set to about stock length and see how the sway bar is. you want the invisible line that goes from the endlink mount hole to the point that it pivots around to be parallel with the ground when the suspension is loaded (car on the ground).
 
if you plan on doing any road racing or autox i would suggest not extending them too far out. especially if you have a pretty stiff set up. i have broken 2 front rod ends (one was my fault) and slightly bent another. granted i have a pretty stiff set up, and running slicks
